Vegan Recipes to Make With Low Budget 🥦

As a highschooler who is jobless, buying my own vegan ingredients is clearly impossible. :) 

Not to mention that I'm also the only vegan in my household! How fun! 

As a result of this, I'm only ever making food and buying seperate ingredients as my family make their own big meals:) I honestly feel terrible because they spend so much to make their own meals and they have me adding more strange ingredients for my very different vegan meals :) 

So in today's blog entry, I would like to write about some of my favourite vegan recipes to make with a low budget! 


1. Muesli Bowl or Oatmeal! 

Muesli is a very cheap vegan option as the meal can vary and you can always change things up depending on how you like it! 

Wether it's dried fruits, fresh cut up fruits, yoghurt, or plant based milk, you can adjust this quick and simple meal according to your own taste. 

All you need to make a Muesli is:

-A cup of oats

-Your favourite plant based milk (I personally use a non-sweetened almond milk or non-sweetened oat milk) 

- Your favourite dried fruits

-Any cut up fruits (preferably Apple, Berries, Nectar or Apricot) but all fruits are welcomed too

-Honey / Or any kind of natural sweetener

-Nuts

(optional) : Chia Seeds, Seeds, Coconut Yoghurt

Put them all together and you've got yourself a really easy, quick and delicious Muesli bowl. 

What's best about Muesli is that you can always prepare them at night and leave them to cool in the fridge, giving you delicious and fresh overnight oats to eat in the morning!



2. Vegan Pancakes


The ingredients you will need:

  • 200g mixed frozen berries (optional) Other alternatives: Bananas, Any Other Kind of Berries
  • 1 tbsp icing sugar
  • a squeeze lemon juice
  • 150g plain flour
  • 2 tbsp caster sugar
  • 2 tsp baking powder
  • a pinch salt
  • a dash vanilla extract
  • 150ml unsweetened almond milk
  • ½ tbsp vegetable oil

  • Not only are these vegan pancakes super delicious, but they are also super quick to make and can save  a lot of your time relatively especially if you need to be places.
  • Here are the steps to make your vegan pancakes:
  • STEP 1

    Tip the berries into a small pan with the icing sugar and lemon juice, and cook for 5-10 minutes or until saucy. Keep warm.

  • STEP 2

    Tip the flour, caster sugar, baking powder and salt into a bowl, and mix to combine. Pour in the vanilla and almond milk, and whisk to fully combine.

  • STEP 3

    Heat a non-stick frying pan over a medium heat with 2 tsp of oil. Swirl the pan so the oil coats the entire surface, and carefully wipe clean with kitchen paper. Add a heaped tablespoon of batter to the pan and cook the pancakes in batches for 3-4 minutes on each side. Keep warm in a low oven while you cook the rest.

And your vegan pancakes are ready to enjoy! 


And of course you can adjust the topping to how you would like, I like to add strawberries and bananas as a topping of mine bacause there's nothing wrong with a little extra fruits!

 3. Vegan Tempeh Burger

For people coming from around the areas of Asia, this meal will definitely seem slightly odd since we don't usually use Tempeh for this purpose, but hey now you know and it's delicous and perfectly vegan! 

Ingredients:
Vegan Burger Bun 
Tempeh
Lettuce
Tomato
Vegan Cheese (optional) 
Tamari or Soy Sauce
Maple Syrup (optional, however it can be used as an alternative to the already slightly sweet soy sauce to give a boost of sweetness over the salty Tamari) 
1-2 pieces of Garlic
Salt Pepper

Steps

Firstly, cut your Tempeh itu rectangles or triangles, perfect enough to fit into the Burger buns. 

This step goes accordingly to how you prefer your Tempeh to be cooked. 
For more flavour, marinate your Tempeh in Tamari and Soy Sauce. 
Add garlic, salt and pepper to your Tamari / Soy Sauce mix and marinate the Tempeh before frying it. Marinate for about 15-30 minutes to assure the flavour is absorbed well. 

After it's done marinating, fry until golden brown. 

Assemble your Burger and add your favourite vegan condiments. Place your golden brown, freshly fried Tempeh right in the middle. 

There you have your vegan Burger! 
Vegan burgers are such a win-win for the vegan community because its just as delicious as your typical Cheese Burger.

These ingredients are relatively cheap, delicious and pretty easy to find around Indonesia!
